BLUEBERRY OAT MUFFINS

INGREDIENTS:

  • 2 cups oat flour (make your own by blending in a food processor) 
  • 2 bananas
  • 1/4 cup peanut butter
  • 1 TBS baking powder
  • salt to taste
  • 1 cup nut milk of choice
  • 1 tsp vanilla extract
  • 1/2 cup blueberries

DIRECTIONS:

  1. Preheat the oven to 350. Grease muffin tin with cooking spray or oil.
  2. In a large  bowl, combine all ingredients to make a batter. 
  3. Use a spoon to scoop the batter into the muffin tin.
  4. Bake for 30 minutes or until you can poke a muffin with a fork and it comes out clean.
