BLUEBERRY OAT MUFFINS
INGREDIENTS:
- 2 cups oat flour (make your own by blending in a food processor)
- 2 bananas
- 1/4 cup peanut butter
- 1 TBS baking powder
- salt to taste
- 1 cup nut milk of choice
- 1 tsp vanilla extract
- 1/2 cup blueberries
DIRECTIONS:
- Preheat the oven to 350. Grease muffin tin with cooking spray or oil.
- In a large bowl, combine all ingredients to make a batter.
- Use a spoon to scoop the batter into the muffin tin.
- Bake for 30 minutes or until you can poke a muffin with a fork and it comes out clean.
