LOADED SWEET POTATO

INGREDIENTS

  • 2 sweet potatoes
  • 1 tablespoon coconut oil
  • ½ red onion, diced
  • 1 red pepper, diced
  • 1 chilli, finely chopped
  • 2 cloves garlic, minced
  • 1  can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • ½ cup tomatoes, diced
  • ¼ cup spring onions, chopped
  • 1/2 cup kale, chopped
  • Coriander, to garnish
  • Salt + Pepper, to taste

Avocado Dressing Ingredients

  • 1 Avocado
  • 1 clove Garlic, peeled
  • 1/2 cup cilantro
  • 3-4 tablespoons Olive Oil
  • 1 tablespoon lemon juice
  • Salt
  • Pepper
  • Water 

Blend all together in a food processor until smooth. 


DIRECTIONS

  1. Preheat oven to 350 degrees
  2. Cook sweet potatoes for around 40 minutes or until soft in the center. Stick a sharp knife in to test.
  3. Fry onion, red pepper, chilli and garlic in coconut oil for approximately until tender.
  4. Add black beans, corn, kale, and cumin and coriander and cook for a further 5 minutes
  5. Chop sweet potatoes in half and add bean mixture to the top
  6. Top with tomatoes, spring onions and coriander
  7. Top with avocado dressing.
